They have finally reached maturity. We feared the sudden cold, it's true, but here they are: stronger and tastier than ever. We're talking about our freshly harvested spiny artichokes, a delight for the palate and the eye. Among the agricultural products of Liguria, they are perhaps the most requested in this season by our customers. And how can you blame them?
That's why the cultivation of artichokes is particularly important to us, and we follow it step by step, as if they were not just plants, but friends to pamper.
It's been five months since we planted them in the open field. Now, in front of our greenhouses and facing the spectacle of the Gulf of Diano, there is an expanse of green in which it is difficult to distinguish the long-awaited fruit. But as we make our way through the tall, thorny leaves, equipped with gloves and a knife, here we see our beloved artichokes.
As soon as they are wet from the morning dew, we cut them and place them on a container together with most of the stem and the leaves. Before arriving on your tables, however, fresh and tender as ever, we take care to try them. After all, the privilege of having a farm is also this!
A video on harvesting our artichokes
There are many ways to preserve them: raw with oil, salt and lemon; fried in batter; together with risotto or pasta. In short, there is no limit to the imagination! After the harvesting guided by the skilled hands of dad Franco, mom Nives takes care of the cleaning and cooking. We have a few guests and we want to make a good impression. But with our artichokes there is no way to go wrong! We decide to enjoy them as an aperitif, raw with extra virgin olive oil of our production, a little salt, pepper and Grana Padano cheese to give them more flavor.
In this video we see a simple way to prepare artichokes
There aren't a lot of them yet because production has been threatened by bad weather. However, you can contact us to check availability and order them. We also do home deliveries, in the surroundings of Diano Marina, up to Imperia, and west up to Albenga!
We are sure you will not regret it!
